A great way to treat yourself and use up very ripe bananas..
Wholemeal SR flour: 1½ cups
Honey or apple juice concentrate: ¼ cup
Maple syrup: 2 tbs
Grated lemon rind: 2 tsp
Eggs, lightly beaten: 2
Soy or rice milk: 1½ cups
Vanilla: 1 tsp
Very ripe bananas, mashed: 2
Place flour into a large bowl and make a well in the centre.
Blend all remaining ingredients separately.
Gradually pour into the flour, and mix to a smooth batter.
Place large spoonfuls of mixture into pan and cook over medium heat until bubbles appear on the surface.
Turn pancake and cook until golden brown on the other side.
Serve with your favourite topping.
