With plenty of hot weather still ahead, you can help beat the heat with this delightfully refreshing Cool Cucumber salad.

Lebanese cucumbers: 6
Medium tomatoes: 4
Olive oil: 4 tbs
Vinegar: 1 tbs
440g can chick peas, drained and rinsed: 1
Spanish onion, finely chopped: 1
Fresh basil leaves, roughly chopped: ½ cup
Mint leaves, roughly chopped: ¼ cup
Sea salt (optional): To taste
Pepper (optional): To taste

Cut cucumbers and tomatoes into small cubes.
Mix oil, vinegar, salt and pepper in a large bowl.
Add all other ingredients.
Toss well and serve.
