Ingredients

400 gm zucchini (choose straight pieces to be able to spiral easily)

3 – 4 white or brown mushrooms (as you prefer)

4 radishes, thinly sliced

1 cucumber, sliced

1 cup cherry tomatoes, halved if large

1 avocado, cut into small pieces

 

Dressing ingredients

¼ cup coconut oil mayonnaise (see recipe below)

½ cup lemon juice

½ tsp herb salt

1 Tbsp Sumac (summer lemon herb)

 

METHOD

Prepare the zucchini noodles with a spiral slicer, grater or mandoline into long thin strips.

Place into a large bowl and add remaining salad ingredients and dressing.
