Ingredients:
1 cup rolled oats
2 cups water or plant milk of choice
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1 Tbsp chia seeds
2 Tbsp chopped walnuts
Optional: 1 tbsp maple syrup or a sliced ripe banana or apple

Instructions:
1. In a saucepan, combine oats, water or milk, cinnamon and ginger.
2. Bring to a gentle simmer over medium heat for 5 – 7 minutes, stirring occasionally.
3. Stir in chia seeds and cook for 1 – 2 more minutes until thickened.
4. Serve warm topped with chopped walnuts and maple syrup or fruit if using.
