Description: This salad makes a delicious crunchy side dish, or you can add noodles to make this more of a meal on it’s own.

Raw Vegan Recipe


2 large carrots, finely chopped

1 lemon, peeled for zest and juiced

½ cup fresh parsley, chopped finely

1 stalk celery, sliced finely

1 pear, sliced thinly

2 cm piece fresh ginger

1/2 teaspoon of sesame seeds


  1. Wash lemon skin well before zesting.
  2. Use a fine grater to make 1 teaspoon of lemon zest and grate the ginger.
  3. Squeeze lemon juice over the grated lemon rind and ginger.
  4. Place dressing in a bowl, ready for salad ingredients.
  5. Thinly slice carrot, celery and pear. (A mandolin slicer helps)
  6. Place thinly sliced salad ingredients into the dressing bowl and massage together.
  7. Garnish with parsley and  sesame seeds.
  8. Serve on a bed of greens of choice.
