Raw Vegan Recipe
Ingredients:
2 large carrots, finely chopped
1 lemon, peeled for zest and juiced
½ cup fresh parsley, chopped finely
1 stalk celery, sliced finely
1 pear, sliced thinly
2 cm piece fresh ginger
1/2 teaspoon of sesame seeds
Method:
- Wash lemon skin well before zesting.
- Use a fine grater to make 1 teaspoon of lemon zest and grate the ginger.
- Squeeze lemon juice over the grated lemon rind and ginger.
- Place dressing in a bowl, ready for salad ingredients.
- Thinly slice carrot, celery and pear. (A mandolin slicer helps)
- Place thinly sliced salad ingredients into the dressing bowl and massage together.
- Garnish with parsley and sesame seeds.
- Serve on a bed of greens of choice.
