This Black Bean Brownie recipe is super easy to make and great for summer entertaining. With the added benefits of being a great source of iron, fibre and folate, the brownies not only taste great they are packed full of nutrition.

 

INGREDIENTS

400 gm canned black beans, rinsed well
3 eggs
1/3 cup raw cacao powder
1/3 cup rapadura sugar
1 cup dates, pitted
3 Tbsp coconut oil
pinch of salt
1 tsp baking powder
1 tsp vanilla extract  

 

METHOD

Preheat oven to 160ºC. Place all ingredients in high-speed blender and process until smooth. Pour into lined baking dish (20 x 20 cm) and bake for 20 – 25 minutes or until it passes the skewer test.
Serve with berries and coconut yoghurt.
