Ingredients:
1 cup cooked quinoa
50 gms kidney beans
50 gms black beans
50 gms corn
1 red onion, diced
1 red capsicum, diced
¼ cup chopped coriander
Dressing
⅓ cup lime juice
1 Tbsp cumin powder (lightly toasted for best flavour)
2 cloves garlic, crushed
Method
Mix quinoa, beans, corn, red onion, capsicum and coriander in a bowl.
Toast cumin powder over low heat then whisk in other dressing ingredients.
This protein-packed salad can be made ahead of time and kept in the fridge. It is a great way to get the benefits of quinoa in your diet.
