Prunes are a rich source of fibre, phenolic acids and contain several vitamins and minerals, including many B vitamins, potassium, vitamin K, iron, magnesium and zinc. Consuming 5-6 dried plums daily has been shown to prevent the loss of total bone mineral density in postmenopausal women. Inexpensive and delicious, prunes are an excellent addition to your wholefoods pantry.

Ingredients

1 cup raw cashews

⅓ cup cocoa

1 tbsp each chia, pepitas and sunflower seeds

1 tsp vanilla

1 tbsp maple syrup

1 cup (200 gm) Australian prunes, pitted

1 tsp of orange zest

1 cup desiccated coconut (for rolling)

 

 

METHOD

Cover  the  prunes  in  boiling  water  for  5  mins, then  drain. Blitz  all  ingredients  together  in  a  food  processor until  smooth.

 Roll  into  small  golf-ball-size  balls  with  wet  hands  and  roll  in  desiccated  coconut.

Store  in  an  airtight  container  in the  refrigerator.
