Chickpea and Feta Salad
SALAD INGREDIENTS
100 g chickpeas
1 capsicum, chopped
1 cucumber, chopped
⅓ cup chopped red onion
⅓ cup olives
⅓ cup chopped cherry tomatoes
¼ cup chopped lettuce
30 g crumbled feta (vegan or dairy)
LEMON TAHINI DRESSING INGREDIENTS
¼ cup tahini
3 tablespoons water
1 tablespoon maple syrup
1 lemon, juiced
1/2 teaspoon dried basil leaves
Method
1. Add the salad ingredients to a large mixing bowl.
2. In a separate small mixing bowl, stir together the tahini, water, maple syrup, lemon juice and basil
3. Pour the lemon tahini dressing on the salad and stir together, until well combined.
